SLOW COOKER CHICKEN CACCIATORE

Happy National Chicken Cacciatore Day! Bust out your slow cooker, if you haven't already done so.

Every time I make this dish, Brian likes to talk like an Italian and then makes this hand gesture with his fingertips together and wags it in the air and will say, "Chicken Cacciatore!" It tickles me!

This dish is one of those comfort meals. It's packed with flavor and healthy too! You can have it with pasta, rice, mashed potatoes, polenta, cauliflower rice, sauteed broccolini or quinoa. Warm up your belly with this dish!

SLOW COOKER CHICKEN CACCIATORE

Adapted from Pillsbury

Serves 3 to 4

Ingredients

  • 1 (3 to 4 pound) whole chicken, cut-up

  • 1 tablespoon house seasoning (1 cup coarse salt, 1/4 black pepper, 1/4 cup garlic powder)

  • 2 tablespoons olive oil

  • 1 onion, sliced

  • 1 yellow bell pepper, sliced

  • 1 (8 ounce) container fresh button mushrooms, sliced

  • 1 teaspoon dried oregano

  • 1/4 teaspoon dried basil leaves

  • 2 garlic cloves, chopped

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 (15 ounce) can tomato sauce

  • Salt, season to taste

Directions

<preparing the chicken>

  • Cut up the chicken into pieces (2 legs, 2 thighs, 2 wings and 2 breasts).

  • Mix together with house seasoning in a large bowl.

  • Heat oil in a large skillet over medium-high heat.

  • Brown the chicken, 3-4 minutes on each side. (Do this in batches.)

  • Set chicken aside.

<cooking in the slow cooker>

  • Add the onions, peppers, mushrooms, oregano, basil leaves, garlic, salt and pepper to the slow cooker.

  • Add the browned chicken pieces.

  • Pour the tomato sauce over the ingredients.

  • Mix well and cover.

  • Cook on high heat setting 4 hours or low heat setting for 8 hours.

  • Season to taste with salt.

Notes

  • Depending how big the chicken is, you can cut the breasts crosswise to give you two extra pieces.

  • You can use any kind of bell pepper. I'm not fan of the green bell peppers.

  • If you prefer you can use canned mushrooms.
