The steak marinade is easy to prepare, it's making sure you have the ingredients. If you don't have such ingredients like sesame oil you'll use it up because you'll be making this steak over and over again, I promise.

KOREAN GRILLED FLANK STEAK LETTUCE WRAPS
Steak adapted from Curtis Stone
1 head Romaine Hearts
1/2 cup fresh cilantro
1/4 cup dark brown sugar
3 tablespoons canola oil
3 tablespoons low-sodium soy sauce
1 tablespoon sesame oil
3 garlic cloves
1/4 teaspoon cayenne pepper
1/8 teaspoon ground ginger
1 teaspoon black pepper
1 teaspoon ground coriander
1 (2 pound) flank steak
1 (about 9 ounces) bag Asian Chopped Salad (I used Taylor Farms and left out the salad dressing & wonton topping)
2 tablespoons apple cider vinegar
1/4 teaspoon salt
Juice of 1/2 lime
<yum yum sauce>
1 cup mayonnaise
2 tablespoons rice wine vinegar
3 tablespoons honey
1 tablespoon ketchup
1/4 teaspoon paprika
1/4 teaspoon garlic powder
pinch of cayenne pepper
Juice of 1/2 lime
<preparing the steak>
Combine the cilantro, brown sugar, canola oil, soy sauce, sesame oil, garlic cloves, cayenne pepper, ground ginger, black pepper, ground coriander and lime juice in a blender; blend well.
Place steak in a 9x13 baking dish, pour marinade over the steak, rub it in.
Cover with plastic wrap, marinate for 1 hour at room temperature or overnight in the fridge.
<grilling the steak>
Preheat the grill over medium-high heat.
Place steak on the grill, grill for 4-5 minutes on each side for medium-rare.
Let rest before slicing.
<making the slaw>
Pour chopped salad into a bowl.
Add vinegar, salt and lime juice; and mix.
<making the yum yum sauce>
Combine mayonnaise, rice wine vinegar, honey, ketchup, paprika, garlic powder, cayenne pepper and lime juice in a small bowl.
Mix well; and set aside.
<assembling the lettuce wraps>
Slice the steak in thin slices.
Take a leaf, add 2-3 slices of flank steak, add slaw and top with the yum yum sauce.
You can use whatever lettuce you like, such as bibb or iceberg.
As for the cilantro, just eyeball it.
This is also great with warm flour or corn tortillas.
If you can't find Asian chopped salad or slaw, regular packaged coleslaw will do.
