Another easy weeknight meal! As a kid, I remember going to Chinese Cafe in Houston with my family. There was this dish with green beans and ground pork that we would always order. I remember it being greasy. But oh so good! Over the years, I've cooked my own version without all the grease, and yet still so good.

Serve this with rice, quinoa, cauliflower rice or eat by itself. Have dinner on the table in minutes!

STIR-FRIED GREEN BEANS WITH GROUND PORK & BEEF

Serves 4-6

Ingredients

  • 1 pound ground pork

  • 1 pound ground beef

  • 3 tablespoons soy sauce

  • 6 garlic cloves, finely chopped

  • 1/4 teaspoon ground ginger

  • 2 tablespoons olive oil

  • 1 small onion, chopped

  • 1 pound green beans, trimmed

  • 2 tablespoons rice wine vinegar

  • Salt and freshly ground black pepper, season to taste

  • Garnish with sesame seeds

Directions

  • Mix together pork, beef, soy sauce, garlic and ginger in a medium bowl. Set aside.

  • Heat oil in a large nonstick pan over medium-high heat.

  • Add the meat mixture, stir and break up; until starting to brown about 6 to 8 minutes.

  • Add the onions, cook for another 2 minutes.

  • Add the green beans and rice wine vinegar, stir for a minute and then cover for 3 minutes.

  • Remove from heat, season to taste with salt and pepper. Sprinkle sesame seeds.

Notes

  • If you don't have ground ginger, you can use fresh ginger. 1 tbsp of fresh ginger = 1/8 teaspoon of ground ginger. For this recipe, it's two tablespoons of fresh ginger.

  • I like my vegetables to be a little crunchy and to keep its color. If you overcook them, they become limp and dull in color.

  • Rice wine vinegar can be substituted with any kind of vinegar, just use less of it and mix with a little water.

  • Add red pepper flakes for a little kick!
