APPLE WALNUT COBBLER...LIKE HOUSTON'S
Craving for Houston's Apple Walnut Cobbler, you can make it now with this recipe! When I first had this dessert, years ago; I immediately fell in love with it while falling head over heels for Brian. I was shocked to find out it's key ingredient(s) is a frozen pie. No way!
Houston's Restaurant, now Bartlett's in Austin is one of my favorite places to eat at. Almost everything on their menu is from scratch, except the cobbler part of this dessert. It's simply a frozen pie, that's been thawed and spruced up!
What I have for you is my own version of their Apple Walnut Cobbler. It's pretty dang close! I should know I married the man that introduced me to it and who used to work there. This is so easy to make, once it's thawed.
What I love most of about this cobbler, is the extra dough all around the dish. Oh and the walnuts add a different kind of texture and flavor to the dish! There's all kinds of cobblers, but most just have a dough topping. Keep an apple pie in your freezer at all times and you'll have an Apple Walnut Cobbler on the table in no time.
APPLE WALNUT COBBLER
Inspired by Houston's Restaurant
Serves 6 to 8
1 frozen apple pie, thawed (I used Mrs. Smith's Original Flaky Crust Apple Pie)
1 1/2 cups walnut halves
1/4 cup dark brown sugar
1/8 teaspoon cinnamon
4 tablespoons unsalted butter, cut into pieces
Preheat the oven to 350 degrees. Place rack in the middle. Butter a 8x8 baking dish.

Place the frozen pie on the counter and allow it to thaw at room temperature for three (3) hours.
ALTERNATIVE METHOD: Place the frozen pie in the fridge and allow it to thaw overnight.

Place the thawed pie into baking dish, upside down.
Take a knife and break up the crust. (Sorry...I forgot to take a picture of this step, just too excited.)
Sprinkle the walnuts, followed by the brown sugar and cinnamon all over the top.
Dot with the butter pieces.
Place in the oven and bake for 40 to 45 minutes or until golden brown and bubbly.
Serve with vanilla ice cream.
You can use any frozen apple pie brand.
Do not use dutch apple pie.
Do not thaw in the microwave.
If you can't find walnut halves, buy 'shelled walnuts' split them down the middle. You want big pieces of walnuts.
If you're still unsure about how to break up the crust. I used a butter knife, made a slit and turned the knife. Make a slit, turn the knife. Repeat till you evenly break up the crust. It really doesn't matter, since you're covering it with the remaining ingredients.
