Whether you're roasting or glazing carrots, it's such a Fall weather kind of side dish to me. Maybe its the color of carrots, orange speaks Fall. On the other hand, I think of Easter, bunnies and carrots. Okay nevermind the Fall thing.
Here's a simple recipe for glazed carrots. It goes great with chicken or pork. Now you can finally use those poppy seeds tucked in your spice rack or drawer for something other than lemon poppy seed muffins.
Who doesn't love glazed carrots?! Think of this as vegetable candy. An easy, delicious and elegant dish that you and your family will love.
HONEY POPPY SEED CARROTS
3 tablespoons honey
2 tablespoons unsalted butter
Zest of one (1) orange
1 teaspoon poppy seeds
1/8 teaspoon salt
6 - 8 carrots, peeled and cut into 1 to 1 1/2 inch lengths
Combine honey, butter, orange zest, poppy seeds and salt in a large skillet.
Bring to a boil over medium-high heat.
Add carrots and stir.
Simmer over medium-low heat for 10-12 minutes.
If the carrots are thick, half them.
Use a microplane to zest the orange, if you don't have one, you can use a box grater on the smallest setting.
