LUMP CRAB MEAT, ROASTED CORN & TOMATO SALAD

Quite frankly, I had leftover crabmeat from the Lemon Aioli over Lump Crab Meat & Sweet Potato Fries dish. I had the one pound package of lump crabmeat from the store, and needed to figure out what to do with the other half.

In my fridge, I always have grape tomatoes, limes, cilantro and cheese. I used to have fresh sweet corn ears all the time, but we don't eat as much corn as we used too. Not sure why or when that change occurred. Anyhow, I ate this salad for days since Brian is not a huge fan of crab. He has to be in the right mood, unlike me I'm always in the mood for seafood.

What I adore about this dish is the nice balance between the sweetness from the corn and the crab along with the acidity from the lime. Here's another summer time salad to satisfy your taste buds!

LUMP CRAB MEAT, ROASTED CORN & TOMATO SALAD

Inspired by Cooking Light

Serves 6 (about 6 cups)

Ingredients

  • 2 corn ears, shucked and roasted

  • 1 cup grape tomatoes, halved

  • 1/4 cup feta cheese, crumbled

  • 1 tablespoon cilantro, finely chopped

  • 1/2 lime, juiced

  • Salt and freshly ground black pepper, to taste

  • 1/2 pound package lump crab meat (I used Reel Fresh from Central Market)

Directions

<roasting the corn>

  • Drop the corn into a large pot of boiling water, season with salt.

  • Let water return to a boil; boil for 1 minute.

  • Turn off the heat and cover for about 5 minutes.

  • Drain water and pat dry corn with paper towels.

  • Heat a grill pan or grill over medium-high.

  • Grill corn until charred here-and-there, about 8 to 10 minutes.

  • Cut kernels off the cobb; set aside.

  • Mix gently corn, tomatoes, feta cheese, cilantro and lime juice in a large bowl.

  • Season to taste with salt and pepper.

  • Fold in the lump crab meat into the mixture.

  • Enjoy!

Notes

  • Alternative method for roasting the corn: heat grill or grill pan over medium-high; add corn and grill for 20 minutes; turning occassionally to get the charred marks.

  • Save time by visiting your seafood department at your local grocery store and getting the lump crab meat that's already been picked through to remove any shells.

  • Always taste before you serve. You may need more lime juice or salt after all.
