SUMMER SALAD: CORN, AVOCADO, TOMATO, CUCUMBER, GOAT CHEESE & EGG WITH A LEMON-GARLIC VINAIGRETTE

I have a huge crush on this salad, because it's so attractive. It's refreshing and it speaks summer, which is why I'm calling it - Summer Salad. The creaminess from the avocado, goat cheese and hard-boiled eggs balances nicely with the crunch factor from the cucumbers and corn kernels.

A few weeks ago, I had a couple girlfriends over for a playdate. We got in the pool, the boys ran around and ate a whole tray of Terra Chips; we just had a nice afternoon together. One of them whipped up this delicious salad; however, she added red bell pepper to the salad. You can cube this ingredient and add it to the salad. I left it out because, I'm not huge fan of raw red bell peppers. I'll eat it, if it's already mixed in, but my preference would be to leave it out. Nonetheless, this is a delicious salad. So thankful she made it!

If you have a favorite lemon-garlic vinaigrette, use it with this salad. I'm sure I could easily whip some up, but Central Market's Lemon-Garlic Vinaigrette made from scratch is very tasty.

SUMMER SALAD: CORN, AVOCADO, TOMATO, CUCUMBER, GOAT CHEESE & EGG WITH A LEMON-GARLIC VINAIGRETTE

Serves 4-6

2 whole eggs

2 ears corn, cooked

Salt for seasoning

1 avocado, pitted and cubed

1 cup of 1/2 pint of grape tomatoes or cherry tomatoes, halved

1 cup english or seedless cucumber, cubed

3 tablespoons goat cheese, crumbled

1/4 cup bottled lemon-garlic vinaigrette (I used Central Market's)

Salt and freshly cracked black pepper to taste

Place eggs in a single layer in a saucepan. Cover eggs with cold water an inch over the top of the eggs. Bring to a rolling boil over medium-high heat. Boil for about a minute. Remove pan from heat. Cover pan and rest for 15 to 18 minutes. Drain and add cold water and ice cubes. Let it cool completely, at least 10 minutes.

Drop the corn into a large pot of boiling water, season with salt. Let water return to a boil. Turn off the heat and cover for about 8 minutes. Don't leave it in too much longer than that, or your kernels will get tough.

Drain water and let corn cool completely. If you're short on time, you can run cold water over corn, till cool. Meanwhile add avocado, tomatoes, cucumbers and goat cheese to a medium-sized bowl.

Optional: After you've cubed the avocado, you can squeeze a small amount of fresh lemon juice over the avocado, and then gently toss it. This is to keep it from browning.

Peel eggs, roughly chop them and add to the bowl mixture. Cut kernels off with a sharp knife and add as well.

Pour dressing over salad mixture. Add salt and pepper to taste. Gently toss all ingredients together. Chill until serving.

Serve it at your next backyard party!

Note:

The English Cucumber is longer, thinner and the seeds are much smaller. You barely notice the seeds; unlike the regular cucumber whose seeds in all honesty should be removed. Sometimes the English Cucumber is sweeter too. Oh, and also the wax on a regular cucumber is simply too much. The English Cucumber is unwaxed and most times wrapped in plastic. The English Cucumber is pricier.
