BROWN SUGAR STEAK RUB

In the Summer of 2013...I was trying to think of a witty title for this post, but nothing came to mind. I've got brown sugar and steak next to each other, that should be enough!

I first sampled a version of this about seven years ago. A friend of ours came over and raved about this easy dry rub recipe he liked to use. My response to him, make yourself at home and get to it. It was so good! It reminded me of Houston's Hawaiian Rib-Eye steaks!

A year later or so, Brian and I went over to a friend's house (different friend) and on the way we picked up four thick cut bone-in rib-eye steaks. They looked lovely! When we arrived, Brian suggested the brown sugar rub, our friends said alright. Hell they were getting a free meal out of this! I got to making the rub, and I said how hard could it be, it's just brown sugar, coarse salt and coarse black pepper. Long story, short! I mixed equal parts sugar and salt. I don't know know what I was thinking, apparently I wasn't. Brian even questioned my rub, I was pretty confident about it.

It was the most salty dish I've ever had! Thank goodness for the red wine, sourdough bread and scalloped potatoes! Nonetheless, we ate those steaks! Since then, I have perfected this super easy dry rub for steaks!

BROWN SUGAR STEAK RUB

1/2 cup dark brown sugar

4 tablespoons coarse salt

3 tablespoons coarse black pepper

Mix together until well blended. Store in an airtight container.

To Use: Sprinkle over your favorite cut of meat with enough to cover generously (store the remainder for next time). Rub and press the mixture over the meat.

Cover and refrigerate for at least an hour or even overnight. Before you are ready to cook the steaks, take them out of the refrigerator to warm up for at least a half hour.

Enjoy over and over again!
