Holy Guacamole! It's been a while since we've been to Ztejas, but they have these tostada bites with grilled shrimp, guacamole and a chipotle puree on tortilla chips. A few months ago, I was craving some so I went to the store and got the ingredients to make my version. Honestly, I forgot that it had chipotle puree. That just complicates things. My version is super easy, especially when you can get sweet potato chips now.
In this picture, I actually made my own sweet potato chips. I don't feel like going into detail on how to make sweet potato chips, that's for another post. Moving on; you have to make this meal and serve it at your next shindig! Your guests will love you!
GRILLED SHRIMP & GUACAMOLE ON SWEET POTATO CHIPS
Inspired by Ztejas
3 avocados, pitted
3 tablespoons of fresh cilantro, finely chopped
1-2 limes, juiced
1/2 teaspoon ground cumin
1/2 jalapeno pepper, seeded and finely chopped (OPTIONAL)
Salt to taste
24 shrimp, peeled and deveined
Dashes of House Seasoning (1 cup salt, 1/4 black pepper, 1/4 cup garlic powder)
1 bag of Terra Chips - Sweet Potato (No Salt Added)
In a large bowl, mash avocados, cilantro, juice of one lime, cumin and optional jalapeno together. Season to taste with lime and salt. When it comes to lime juice, I start out with a little and taste my food before I add anymore.
Always taste your food throughout the process, and with a new spoon too! It's something my Mom did, and it just stuck with me.
Cover, and set aside. Now, turn on the grill.
Marinate shrimp with house seasoning. Place on skewers or grill grid. I can't live without mine, and I have two sizes too. Grill approximately 2 minutes on each side. Note: You can also pan sear the shrimp. Heat 1 tablespoon of oil in large non-stick pan over medium-high heat. Saute shrimp in the oil for 2 minutes, turn over and cook another 2 to 3 minutes or until shrimp have turned opaque and pink or orange.
Time to assemble!
Using your favorite chip, in my case Terra's Sweet Potato Chips, place a dollop of guacamole and then top with shrimp.
